My Sister Beth's Bread

Ingredients

  • 1 tbsp. yeast
  • 1 cup warm water
  • 1/3 c brown sugar
  • 1/3 c oil
  • 1 tsp salt
  • 3 cups half white/half brown flour
  • 1 - 2 tbsp. gluten

Instructions

  1. Dissolve 1 tbsp. yeast in 1 c warm water
  2. stir in brown sugar and oil
  3. add salt
  4. beat flour and gluten in vigorously
  5. knead until a silky lump
  6. let rise until double (the recipe says an hour, but this is a lie on a draughty boat)
  7. punch down
  8. place in bread pans, let rise again
  9. bake at 350 degrees F from 15 to 45 minutes depending on the heat and unpredictability of your oven
